As you may be aware we here at the farm have been making Kombucha. Kombucha is a raw, live beverage with many health benefits that originated in Asia. It is traditionally made by feeding sugar and black tea to a culture of split-fission yeasts and beneficial bacteria. The byproduct of the symbiosis of these organisms is a sweet and tart beverage that contains butyric acid, gluconic acid, lactic acid, malic acid, oxalic acid, usnic acid, as well as some B-vitamins. We here at Frog Belly Farm have perfected a method of making this delicious drink using Madhava clover honey instead of sugar, and pu-ehr tea, an un-fermented cave cured tea from China. We feel that our recipes and methods make a far superior and potent product. Every batch is 100% handmade in one gallon glass containers. Each container is checked and tasted before bottling to assure a quality product. The whole process is magical, every single gallon has it's own subtle nuances, some have hints of cinnamon, some apple, some taste of fruits or even flowers. These individual gallons are then blended together to create the best flavor profile and, as such, rarely do two bottles taste the same. Some will be tart some will be sweet, we believe that this diversity of flavors is key. There are so many variables in the process, such as ambient temperature, humidity, barometric pressure, and even differences in the honey and tea.
Our Kombucha is quite different than whats available in stores today. For those who prefer the lighter Kombucha's you can add some water to our potent formula. The store bought Kombucha's often mix their products with juice to create other flavors, our Kombucha can be mixed with juices, and other drinks to create the tastes that suit you.
